Abstract

Baked or cooked food is typically small, flat, and sweet. It usually contains flour, sugar, and a type of oil fat. It can include other ingredients such as raisins, oats, chocolate chips, nub, etc. Cookies may be produced in factories, in small factories, or at home. Cookie variants include sandwich biscuits, such as custard creams, jammie dodgers’ bourbons, and Oreos with marshmallows or jam filling. Cookies are Oreos often served with beverages such as milk, coffee, or tea. Santol or cotton fruit is a typical fruit grown in South Asia. It is commonly cultivated throughout these regions, and the fruits are seasonally abundant in local and international markets. The researchers always want to eat sweets and sour foods. The researchers created a new taste of the basic cookies and came up with this idea because many people do not like sweet foods. Hence, the researchers added santol to lessen the sweetness in cookies and create a new taste. The researcher used a random sampling technique because not all students and teachers will be able to answer the survey questionnaire. The researcherspersonally distributed the survey questionnaires to the students and teachers. The researcher chose Grade 12 Home Economics Strand students and teachers from Bestlink College of the Philippines. The results showed that the grand mean for students in terms of was 2.9, which had the verbal interpretation of moderately agree, while teachers had the grand mean of 3.07, which had the verbal interpretation of agree(A).In terms of aroma, teachers had the grand mean of 1.22(L.S.). In terms of nutritional value, the students had a grand mean of 3.79, which had the verbal interpretation of A, while teachers had a grand mean of 4.48, which had the verbal interpretation of strongly agree (S.A.) In terms of competitiveness, students had a grand mean of 4.14, with the verbal interpretation of S.A., while teachers had a grand mean of 4.73, with the verbal interpretation ofS.A. In this research, the researchers upgraded cookies by adding santol to mix sweet and sour tastes. This product will easily sell in schools or a bakery.
