Abstract

Bitter melon (Momordica charantia)has been used in various Asian and African herbal medicine systems for a long time. In the Philippines, it has been used as a folk remedy for a variety of ailments, particularly stomach complaints. Traditional medicinesinIndiaalso use bitter melon. Different parts of the plant are used to treat diabetes. A cupcake is a small cake that is designed to serve one person. A cupcake may be baked in a small thin paper or aluminum cup. Similar to larger cakes, cupcakes are decorated with icing and other cake decorations such as fruits and candies. Here, the researchers used experimental, randomized experimental, and quasi-experimental designs in this study. Simple random sampling was used to select the respondents. The results of this study showed that in terms of taste, the weighted mean for the students was 4.59, which showed that the product is acceptable, and the weighted mean for teachers was3.67, which showed that the product was acceptable in terms of taste. In terms of aroma, the weighted means were3.5 for the students and 3.6 for the teachers, which showed that the product is highly acceptable for both respondent groups. In terms of presentation, the students had a weighted mean of 3.13, which showed that the product is acceptable, and the teachers had a weighted mean of 4.5, which showed that the product is highly acceptable. In terms of the nutritional value, the weighted means were 4.9 and3.9for the students and teachers, respectively. Bitter melon was used for people including children who do not eat bitter melon. Bitter melon has zinc, iron, vitamin A, and vitamin C. Bitter melon may help reduce high blood sugar, aid weight loss, and decrease cholesterol levels.
