Abstract

Bilimbi, which is also known as Averrhoa bilimbi, is a fruit-bearing tree of the genus Averrhoaandis a close relative of the carambola tree. Cucumber, which is also known as Cucumis sativus, is a cultivated plant that belongs to the gourd family. We chose bilimbi and cucumber as our main ingredients because they are rich in nutrients such as calcium, phosphorus, carotene, niacin, iron, thiamine, and fiber. Cucumber is also rich in nutrients such as vitamin K, vitamin C, magnesium, potassium, manganese, and vitamin A. The study utilized experimental research that strictly adheres to a scientific research design. It includes a hypothesis, a variable that can be manipulated by the researchers, and variables that can be measured, calculated, and compared. This research method is referred to as hypothesis testing or deductive research method. A simple random sampling technique was used in this study, where a subset of individuals was chosen from a larger group. Each individual was chosen randomly and entirely by chance. A survey questionnaire was used as the instrument to gather information from respondents. The table showed the summarized results in terms of the overall weighted means for the taste, aroma, nutritional value, and presentation. In terms of taste, the students obtained a weighted mean of 3.6, which was highly acceptable, and the teachers obtained a weighted mean of3.6. In terms of aroma, the students obtained a weighted mean of3.7, which was highly acceptable, and teachers obtained a weighted mean of3.4, which was acceptable. In terms of the nutritional value, the students and teachers had the same weighted means, which had the verbal interpretation of highly acceptable. In terms of presentation, the students obtained a weighted mean of4.4, which was highly acceptable, and teachers obtained a weighted mean of4.2, which was highly acceptable. In making this study, the researchers knew the level of acceptability of bilimbi cucumber jam and if there are potential buyers. After analyzing the data gathered, we knew that there is a possibility to sell our product in the market. Bilimbi and cucumber have many nutrients that our body needs. The researchers recommended that future researchers should study bilimbi and cucumber further because of the nutrients they have. Bilimbi is also cheap; hence, if you create products by using bilimbi and cucumber in your business, then you will earn more profit.
