Abstract

Tomato jam is a wonderful condiment for cheese, meat, and fish made of seasonal vined ripened tomatoes, sugar, cinnamon, and lemon rind. Tomato jam is carefully cultivated in the ecologically pure land of Alentejo, Portugal. Tomatoes are filled with antioxidants, which may help neutralize free radicals in the bloodstream that can cause cell damage. Tomatoes also contain lycopene, which is known to help reduce the risk for certain types of cancers. Tomato jam is an excellent substitute for ketchup. The researchers utilized the experimental research sampling design, and the respondents were selected by a simple random technique. Survey questionnaires were distributed to collect pertinent data for this research. In terms of taste, the respondents rated it as acceptable, with a weighted mean of 4.03. In terms of aroma, the weighted mean was 3.83. In terms of the nutritional value, the weighted mean was4.19. In terms of presentation, the weighted mean was3.86. In terms of viability, the respondents rated tomato jam as acceptable. The product has no aftertaste of bitterness and has an enticing aroma. It is recommended to further refine the product for competitiveness and presentation. Further study on its marketability is also recommended.
