Abstract

Suman is a rice cake that originated from the Philippines. It is made from glutinous rice cooked with coconut milk that is often wrapped in banana leaves or buli or buli palm and steamed. It is usually sprinkled with sugar or laden with “anis.”Suman is also known as “budbod” in the Visayas region. We made a new version of suman by adding kalabasa. This product maintains the good health of every person who eats it and has been reported in experimental studies to be filling. This is also healthy similar to suman kamote. It is good because it contains nutrients and can give more benefits to our bodies. A quantitative method was used in the study using the experimental research design to evaluate the level of acceptability of suman kalabasa among Grade 12 Home Economics(HE) Strandstudents and teachers. The following five factors were assessed to determine the level of acceptability of suman kalabasa: taste, aroma, nutritional value, competitiveness, and presentation. Data were collected by distributing questionnaires to 50Grade 12 HE Strand students and 10 HE teachers that were selected by single random sampling. In terms of taste, the grand meanwas3.10, with the verbal interpretation of agree (A).In terms of aroma, the grand mean for students was3.16, with the verbal interpretation of A. In terms of presentation, the grand mean for students was4.10, with the verbal interpretation of strongly agree (SA).In terms of competitiveness, the grand mean for students was 4.08, with the verbal interpretation of SA. In terms of nutritional value, the grand mean for students was4.13, with the verbal interpretation of SA. In terms of taste, the grand mean for teacherswas3.77, with the verbal interpretation of SA. In terms of aroma, the grand mean for teacherswas3.55, with the verbal interpretation of SA. In terms of presentation, the grand mean for teachers was4.30, with the verbal interpretation of very strongly agree (VSA). In terms of competitiveness, the weighted mean for teacherswas4.75, with the verbal interpretation of VSA. In terms of the nutritional value, the grand mean for teachers was 4.70, with the verbal interpretation of VSA.
