Referred to as the “king of fruits,” durian is a well-liked fruit in its native Southeast Asia. It is a large, spiky, greenish-brown fruit. When fully ripe, durian fruit releases a strong odor that varies based on the type. The fresh fruit is so off-putting to many that it is even banned from being eaten in public spaces and on public transport. When mature, durians often split open, unleashing that famous scent and making it quite easy to access the tasty flesh inside. The white, yellow, or red flesh, favored by many for its creamy texture and unique taste, can be consumed raw or cooked, and is usually sliced with a large knife or cleaver. Due to its brief growing season, short shelf life, and increasing demand, durian is relatively expensive, particularly if brought in from abroad. In this research, a descriptive and quantitative research approach is employed to facilitate the administration of a survey questionnaire. The population will participate in the survey following the precise identification of the variables through quota sampling. The investigators utilized quota sampling due to its convenience in collecting the required number of respondents and data. According to the results, using durian as the primary component in the product somewhat fulfilled expectations. The assessment by respondents, as a predicted variable, did not influence the outcomes. Decrease the odor of durian. Respondents rated the product innovation with a composite mean presentation and color score of 3. 43, very satisfied; taste and ripeness composite mean of 3. 26, very satisfied; refreshing flavor composite mean of 3. 26, very satisfied; sweetness composite mean of 3. 53, very satisfied; aroma and fruity scent composite mean of 3. 26, very satisfied. Based on the summary of findings, conclusions, and recommendations, the respondents appreciated tasting the durian matcha latte and highlighted favorable content for SHS teachers. The respondents have numerous queries regarding in our product, such as how to lessen the smell of durian. Therefore, our respondents, the SHS teachers, asked us many questions, and the researchers discussed all of the steps that they can take to reduce the smell of durian fruits.
