ASSESSMENT ON THE ACCEPTABILITY LEVEL OF THE LANZONES FRUIT IN THE CREATION OF DELECTABLE MOCKTAIL

Lanzones are commonly found in Southeast Asia and are cultivated in Malaysia, Indonesia, Thailand, the Philippines, and Sumatra. Belonging to the Mahogany family, lanzones are known for their natural sweetness and a combination of tangy and sour flavors. These fruits can be used in mocktails to create refreshing beverages by juicing them or mixing them with citrus fruits, herbs, or coconut water. Enhancing the mocktail’s taste and presentation can be achieved by incorporating tropical fruits, fresh herbs, or garnishes. This study utilized a descriptive and quantitative research design to conduct a survey questionnaire. The respondents were selected through quota sampling to assess the acceptability of the lanzones mocktail. The results showed that the aroma received a composite mean of 3.56, taste scored 3.41, and appearance obtained 3.46, all of which were rated as "very satisfied." The study revealed that while many respondents appreciated the unique and distinctive flavor profile of the lanzones mocktail, some suggested that adding sugar or honey could enhance its sweetness. The product received positive evaluations for its visual appeal, aroma, and taste, although improvements were recommended to refine the overall experience. Despite varying preferences, the mocktail was generally well-received. Based on the findings, the respondents were satisfied with the lanzones mocktail, recognizing its potential benefits. However, only a small portion of the respondents claimed to be in good health. The researchers aim to enhance their expertise in product development and hope that this study will serve as a valuable reference for future research.
