Assessment of Viability of Jackfruit Empanada

Abstract

Jackfruit (Artocarpus heterophyllus) is full of vitamin C and antioxidants, which help the immune system. The researchers added the jackfruit to the filling for the empanada. The original empanada has a filling of sweet potato and meat. This study used an experimental research design. The respondents were selected randomly. The researchers utilized the survey questionnaires for collecting the data of the respondents. The respondents assessed jackfruit empanada in terms of the following: taste was rated as acceptable (weighted mean of 4.14), the aroma was rated as acceptable (weighted mean of 4.095), the nutritional value was rated as acceptable (weighted mean of 4.18), competitiveness was rated as acceptable (weighted mean of 4.31), and presentation was rated as acceptable (weighted mean of 4.405). Hence, jackfruit empanada is an acceptable product. The respondents recommended that the product’s texture should be improved because it is the presentation required for an empanada.
