ASSESSMENT ON THE ACCEPTABILITY LEVEL OF MANGO PEEL CHIPS SERVED WITH HONEY MUSTARD SAUCE: AN ALTERNATIVE HEALTHY SNACK

Mango is a tropical fruit known for its sweetness and high nutritional value. Its thick peel protects the soft, delicate flesh inside. Research has shown that mango peels are rich in nutrients and completely edible, containing essential vitamins and minerals. This study aims to assess the acceptability of mango peel chips as a healthy alternative snack while highlighting the benefits of mango peel consumption. Additionally, the research seeks to educate individuals on the potential advantages of utilizing mango peels in food products. The study employed a descriptive and quantitative research design, using surveys to assess the acceptability of mango peel chips among Grade 12 Accountancy, Business, and Management students at Bestlink College of the Philippines. Thirty respondents were selected through quota sampling, and data was gathered using structured questionnaires and checklists. Findings indicate that respondents were generally satisfied with the texture, flavor, aroma, and appearance of mango peel chips. The texture received a composite mean of 3.1, while aroma scored 3.20. Flavor was the most appealing aspect, with a composite mean of 3.7, whereas appearance was rated 3.16. The researchers successfully met the respondents’ satisfaction levels, demonstrating that mango peels can be transformed into a delicious and healthy snack. However, some aspects of the product still require improvement. The study revealed that mango peel chips received favorable feedback, particularly for flavor. Recommendations for improvement include balancing bitterness and enhancing crunchiness. The researchers aim to refine their expertise and further assess the acceptability of mango peel chips served with honey mustard sauce as a healthy snack alternative.
