Acceptability of Dragon Fruit Jam-Infused Leche Flan in Bestlink College of the Philippines

Abstract

Dragon fruits are low in calories and high in vitamin C and fiber. Dragon fruit seeds contain a small number of antioxidants such as lycopene and lesser-known phytoalbumins. Leche flan is rich in vitamins and minerals and is a good source of selenium, phosphorus, and calcium. Leche flan contains a high number of whisky components that may include saturated fat, cholesterol, sodium, and sugar. Experimental design research was used in this study. The respondents were selected using a simple random sampling technique. The researchers utilized survey questionnaires to gather data from the respondents. In terms of taste, the respondents answered acceptable, with a weighted mean of 3.36. In terms of aroma, the respondents answered acceptable, with a weighted mean of 3.70. In terms of nutritional value, the respondents answered acceptable, with a weighted mean of 4.13. In terms of competitiveness, the respondents answered acceptable, with a weighted mean of 4.32. In terms of presentation, the respondents answered acceptable, with a weighted mean of 4.23. The respondents accepted dragon fruit jam-infused leche flan because it has no odor and is appetizing. The respondents recommended adding more dragon fruit flesh to improve the taste. Further study on its color is also recommended.
