LEVEL OF ACCEPTABILITY OF BANANA BLOSSOM PATTY AS SUBSTITUTE TO BEEF PATTY AMONG RESIDENTS AT BARANGAY PASONG TAMO LUZON AVENUE QUEZON CITY

A hamburger typically consists of a ground meat patty placed between sliced buns, often accompanied by various fillings. In the Philippines, burgers are widely popular, especially with fast-food chains such as McDonald’s and Jollibee. However, their high saturated fat content poses health risks, including increased chances of heart disease and high cholesterol. In light of these concerns, this study seeks to innovate a healthier yet satisfying alternative. Specifically, it aims to evaluate the acceptability of using banana blossom as a substitute for beef patties among residents of Barangay Pasong Tamo, Luzon Avenue, Quezon City. This study adopted a quantitative research design to examine the research problem using a theory-based approach supported by statistical analysis. Purposive sampling was employed, allowing the researchers to intentionally select participants who could provide relevant and valuable information aligned with the study's objectives. A total of 100 residents from Barangay Pasong Tamo, Luzon Avenue, Quezon City composed of 47 males and 53 females were chosen as respondents. Data collection was conducted through the use of structured survey questionnaires to ensure accuracy and reliability. The results showed that the banana blossom patty was rated Very Much Acceptable in terms of appearance, with a weighted mean of 3.68. For aroma, it also received a Very Much Acceptable rating, with a weighted mean of 3.67. In terms of taste, the patty earned a weighted mean of 3.33, interpreted as Acceptable. Among the 50 respondents, the largest age group was 37 years old and above, comprising 34% of the sample. In terms of gender, 56% of the respondents were male. Furthermore, among the suggestions for product improvement, the most common recommendation, accounting for 30% or 15 responses, was to add more vegetables. This study seeks to assess the acceptability of banana blossom patty as an alternative to beef patty among residents of Barangay Pasong Tamo, Luzon Avenue, Quezon City. It evaluates the product based on appearance, aroma, taste, and texture, including specific flavor attributes such as bitterness, moisture, and crunchiness, to inform possible adjustments in ingredient proportions.
