Abstract

Malunggay, or Moringa oleifera, is a widely known vegetable in the Philippines, often found growing in backyards. It is recognized for its high nutritional value and has traditionally been used to reduce inflammation and pain. It is also known to provide benefits in managing conditions such as asthma and diabetes and is especially popular among mothers for its ability to support breastfeeding. Given its medicinal and nutritional properties, this study explores the potential of malunggay as a primary ingredient in the development of a healthy snack alternative in the form of malunggay chips for the community of San Jose del Monte. This study employs an experimental research design to investigate the relationship between independent and dependent variables, specifically to determine the cause-and-effect benefits of malunggay chips as an alternative snack. The research evaluates the product’s sensory qualities and consumer acceptability, with a focus on its appeal to children and adults. Data were collected through surveys that measured appearance, taste, texture, satisfaction, and challenges in consumption. The findings revealed that malunggay chips were perceived as a healthy and appealing snack alternative with high acceptability across various age groups. Respondents strongly agreed that the chips resembled traditional chips in appearance, texture, and taste. Most respondents expressed high levels of satisfaction, noting the malunggay chips’ unique yet familiar flavor profile. The chips were particularly favored for their crispiness and balanced taste, which contributed to their positive reception. The results suggest that the malunggay chips have strong potential as both a nutritious snack and a viable business product. This study highlights the potential of malunggay chips as a healthy snack alternative that is well-accepted by children, teenagers, and adults. The high satisfaction ratings among respondents indicate that malunggay chips can meet consumer expectations in terms of taste, texture, and nutritional value. The product is especially beneficial for children and seniors, who require nutrient-rich food options. Despite minor challenges, such as acceptability among picky eaters, the overall reception was positive. The malunggay chips were recognized not only for their health benefits but also for their market potential, making them a promising innovation in the healthy snack industry.
