Leche flan is rich in cholesterol because it has many eggs. Hence, the researchers made a healthy version of leche flan, that is, sampaloc-flavored leche flan, which aims to enhance the nutritional value because tamarind has anti-oxidant and anti-inflammatory properties that help fight heart disease, cancer, and diabetes. The researchers used experimental method because the study focuses on the assessment of the respondent on the characteristics of sampaloc leche flan in terms of appearance, taste, texture, and nutritional value. The results showed that sampaloc leche flan is acceptable.
