Abstract

INTRODUCTION

Meat longganisa is commonly known as an easy-to-cook and all-time favorite food by many Filipinos as most of their viands are made out of pork or chicken. Each of the provinces in the Philippines has its own version of longganisa. The researchers from Cavite made their own version of longganisa different from what other provinces had to offer. They did not use meat products. Instead, they used to fish, Tilapia to be specific. Before conducting the research, they madea sample test of using Tilapia as the main ingredient in making a longganisa and they can actually taste the original longganisa flavor in their product. In addition, it surely has lots of protein from the meat of the fish.

METHODS

The respondents of this study are Grade 11 students which consisted of a total number of 400. The researchers used the slovins formula to compute the marginal error which is 5%. The final computation for 5% of 400 is equal to 200. They selected 20 respondents in each strand/ section. This was checked by an expert.

RESULTS

Out of 200 respondents/participants, 198 (99%) of them liked the tilapia longganisa, while 2 (1%) respondents/participants disliked the tilapia longganisa. Among the respondents, 198 (99%) respondents/participants said that it was Tilapia longganisa, while the 2 (1%) respondents/participants said it was just an ordinary tilapia.

DISCUSSIONS

Tilapia was acceptable as a substitute in pork meat for our participants. The product becomes favorable to the participants because it is more affordable and healthy, making it recommendable to others. It is just like an ordinary longganisa, only much better because of being healthy and affordable. Most of the participants liked the tilapia longganisa as a substitute for pork meat in making longganisa. Most of our respondents preferred to eat the Tilapia longganisa and most of them agree that tilapia can be a substitute to pork meat in making longganisa.
